The snowball & avalanche calculators have a "copy share link" button; which gives you the ability to come back to the plan later. All information is stored in the link, not on the website. You can also download the calculated plan to a CSV text file.

When you do want an account
The calculators give you a plan for today. The Undebt.it user account keeps that plan current: you log payments as you make them, balances and due dates update, and the schedule recomputes every month. To do that it has to remember your accounts, so it needs a login. A free account asks for an email address and a password, or a Google sign in, and that is all. No credit card, no bank credentials, no spam, no phone number.
